Since *I* can't enter the Iron Chef challenge, I'm just gonna post one of my most favorite Crockpot recipes for you to try iff'n you want. :-)
Crockpot Lentil Soup
1 c. dry lentils
1 c. chopped carrot
1 c. chopped celery
1 c. chopped onion
2 cloves garlic, minced
1/2 tsp. dried basil, crushed
1/2 tsp. dried oregano, crushed
1/4 tsp. dried thyme, crushed
1 bay leaf
3 1/2 c. chicken broth or veggie broth
1 1/2 c. water
1 (14 1/2 oz) can Italian-style stewed tomatoes
1/4 c. snipped fresh parsley
2 Tbs. cider vinegar
Rinse lentils. In CP place lentils, carrot, celery, onion, garlic, basil, oregano, thyme, and bay leaf. Stir in broth, water and undrained tomatoes. Cover; cook on low-heat setting for 12 hours or on high-heat setting for 5 to 6 hours. Discard bay leaf. Stir in parsley and vinegar (if desired). Makes 6 servings.
***I rarely use the tomatoes because my family is not a big fan of them. But you MUST use the vinegar - it's important! The soup just will not taste the same without it.

Thanks so much for sharing this, Heidi. Sounds easy and best of all.....inexpensive! :)
OK, so I don't want to sound like an idiot here but I have never used this lentil that you speak of. I have heard of them but I didn't know people really ate them. What do they taste like and where in Wal-Mart do I find them?? I would love to try this soup though, iff'n I had a lentil :)
Hey could I add a side of beef to that?
Lentils!! YOu like them a little don't you Heidi. My family would not be happy if I made this. Oh I should share with you my lentil brownie recipe. Yes indeedery bob. :)
I love my crockpot, because you can just throw stuff in the thing and when you come home, its done, but my wife is so tired of my lentil soup... I do the same thing, but leave out the chicken broth, as we are vegans, but substitute vegitable boulion(?) cubes and also I throw in some taters, maybe peas, and leave out a lot of those herbs, my wife doesnt like it when I get too fancy with my flavorings.
As an SDA..can lentils really taste good ..cause they lOOk so bad ;o/
Yes I know they are good for us..but seriously how do you get your family to participate..when the mother doesn't like'm?
we've just started eating lentils. i'll have to give this soup a try. does it have to be cider vinegar? i hope that's not a stupid question.
